Cucumber Dill Chickpea Salad

Ingredients
- 1/2 cup Chick Peas
- 1/2 Cucumber- diced (or more if desired)
- 3.5 oz tomatoes - diced
- 1 clove fresh minced Garlic
- 1 TBSP fresh chopped Scallions
- 1-2 tsp fresh chopped Parsley (to taste)
- 1- 2 tsp fresh chopped Dill (to taste)
- Fresh Lemon Juice and/or Lemon Zest (to taste)
- 1 TBSP of Red Wine Vinegar (to taste)
- 1 TBSP of Aquafaba (Chick Pea Water) or Chicken Broth (to taste)
- Pink Salt & Pepper (to taste)
Preparation
- In a medium bowl, add 1/2 cup of cooked chick peas.
- Dice the cucumbers and tomatoes- adding them to your bowl.
- Mince the garlic, chop the scallions, parsley and dill.
- Squeeze in the lemon and/or lemon zest to taste.
- Pour in the Red Wine Vinegar and Chickpea Water or Chicken broth.
- Season with salt and pepper to taste.
- Stir and refrigerate to let the flavors settle (optional). Enjoy!
Optional Ideas
- This recipe makes 1 serving of vegetable and protein. Consider multiplying the ingredients and enjoy a bigger meal prep!
- Feel free to put the ingredients over a bed of lettuce.
- If you're not a vegetarian, swap the chick peas for 3.5 oz of chicken, shrimp or steak. Then put the ingredients over a bed of lettuce.
