Grilled Cauliflower Pockets

Ingredients
- Cauliflower (Medium to large)
- Spices
- Salt
- Pepper
- Garlic Powder
- Onion Powder
- Chicken Broth
Preparation
- Preheat your grill to 400 degrees (medium/ high heat.)
- While the grill is heating, prepare the cauliflower.
- Cut up the cauliflower and weigh your portions out into 3.5 oz each.
- Depending on how many portions you have, tear that many pieces of aluminum foil.
- Place each portion of cauliflower into the foil adding in a splash of chicken broth, and spice them however you'd like.
- Fold the aluminum foil up tight around the cauliflower.
- Place the pockets on the grill and close the lid for 10-15 minutes. (Leave them in longer for a char- but not too long so they can reheat well.)
- Unfold the pockets and enjoy!
Optional Ideas
- Use fresh minced garlic and fresh herbs to enhance the flavor of your pockets!
- Step 4 Transition and beyond: add a small pad of butter to each pocket for healthy high fat and a delicious boost of flavor!
