Kimchi Fried Rice

Ingredients
- 3.5 oz of cooked cauliflower rice seasoned with garlic and onion powder
- 1 cup Kimchi (Wegmans brand and cabbage only) coarsely chopped
- 1 whole egg and 3 egg whites
- Braggs Aminos to taste
- Chicken broth
- Green onions for garnish
Preparation
- Using non-stick pan, scramble up the eggs whites.
- Add the chopped Kimchi and Cauliflower rice. Sauté for about 10 minutes to heat through
- Then sprayed Braggs to taste.
- Splash some chicken broth in to add some moisture ( maybe 1 - 2 Tbsps).
- Remove the rice mixture and quickly fry the whole egg in same pan to over easy (whites cooked, but yolk runny) and place on top of rice.
- Topped with sprinkled green onion for garnish.
Optional Ideas
Skip the egg and substitute 3.5 oz of chicken.
Serve with Romaine salad.
Add chopped cabbage if you need more to eat, just sauté with cauliflower rice.
