Salsa, Spinach and Italian Herb Omelette

Ingredients
- 1 Whole Egg
- 3 Egg Whites
- Approved Spray
- A dash of onion powder
- A pinch of Italian seasoning
- Black Pepper
- A cup of spinach
- A pinch of salt
- Organic Chicken Broth
- Salsa
Preparation
- In a bowl, crack 1 whole egg & 3 egg whites. Whisk the eggs with a fork until frothy.
- Add a dash of onion powder, Italian seasoning, and black pepper.
- Heat up your pan to medium heat. Spray the pan with approved spray. (Ex. Avocado Oil spray or Smart Balance)
- Add the egg mixture to the pan.
- Wait until the eggs are mostly cooked to flip.
- Once the eggs are flipped, turn off the heat.
- In a separate, heated pan pan, add a cup of spinach.
- Add a splash of chicken broth to the spinach for flavor and so it doesn't stick.
- To the spinach, add salt & pepper to your preferred taste.
- Place 2/3 of the cooked spinach to one side of the open omelette. Close up the omelette.
- Put the rest of the cooked spinach on top and dollop out a couple of spoonfuls of salsa. Enjoy!
