Shaved Brussel Sprout Salad

Ingredients
- 1 cup Chopped Romaine Lettuce
- 2 oz shaved Brussel Sprouts
- 1.5 oz shaved Fennel
- 1 Tablespoon Chopped Chives
- 1/4 cup Organic Chicken Broth
- 1-2 Lemon Wedges
- 1/2 cup Blueberries
- Salt & Pepper to taste
Preparation
All of the following ingredients to a bowl!
- Start by chopping up your Romaine Lettuce. (If you'd like more, chop more!)
- With a mandolin, shave 2 oz of Brussel Sprouts and 1.5 oz of fresh Fennel.
- With kitchen scissors, snip 1 Tablespoon of fresh chives into the salad.
- Pour in 1/4 cup of chicken broth.
- Squeeze in a lemon wedge or 2.
- Add your 1/2 cup serving of blueberries to the bowl.
- Finish with Salt & Pepper to taste.
- Mix together well, and enjoy!
Optional Ideas
- Feel free to play around with the ingredient amounts for your desired taste.
- Add Grilled Chicken to this meal as a delicious protein option!
- For Step 4 & Beyond, add a drizzle of Extra Virgin Olive Oil for added flavor and a healthy high fat source.
- For Step 4 & Beyond, this salad would also be good with a little feta cheese or almonds.
