Turkey Meatballs with Zucchini Noodles and Sweet Lemon Sauce

Ingredients
Meatballs
- 100g/3.5oz ground white meat turkey breast
- 1 clove garlic finely minced
- 1 grissini breadstick (or crunchy carb of choice) crushed into small chunks not fine
- Salt and pepper to taste
- Add additional spice of choice (optional)
- 3.5 oz zucchini noodles (Spiraled with a Veggetti)
- 1/2-1 lemon juiced depends on how juicy
- 1/4 cup chicken stock
- 1/4 tsp powdered stevia
- 1/8 tsp xanthan gum
- 1/2 tsp fresh chopped parsley
Preparation
- Preheat oven to 450
- Mix meatball ingredients together make into 3 even meatballs.
- Put on parchment lined baking sheet
- Bake until golden brown and cooked thru 10-12 min.
- Spiral your zucchini into noodles.
- Make the Lemon Sauce.
- Put all ingredients except xanthan gum in small nonstick pan.
- Reduce 2-3 min.
- Add xanthan gum a little at a time to thicken sauce.
- Remove from heat.
- Toss zucchini noodles in sauce and serve with the meatballs!
Optional Ideas
- Feel free to substitute the Ground Turkey for Ground Chicken, Beef or Veal.
