Sweet n’ Sour Meatballs

Ingredients
- 3.5 oz/ 100 grams of grass fed ground beef
- 3.5 oz or up to 5.5 ounces of wilted spinach
- Chicken or Beef Broth
- 1 tablespoon minced onion
- 1 clove of garlic crushed and minced
- 1 serving of a crunchy carb that makes bread crumbs (or about 2-3 tablespoons)
- Pinch of garlic powder
- Pinch of onion powder
- Pinch of cayenne pepper
- ¼ cup lemon juice
- 1 tablespoon Bragg liquid aminos
- 1/2 packet of Stevia to taste
- Green Onions/ Scallions (optional)
- Everything But The Bagel Spice (optional)
Preparation
- Start by mincing the onion and 1 clove of garlic.
- Combine the 3.5 oz of ground beef with garlic, minced onion, "bread crumbs" and spices. Form this mixture into 5-6 meatballs.
- Heat up a small saucepan on medium-high heat.
- Start the deglazing process by pouring in a bit of chicken or beef broth, letting it cook down. Add more broth to create flavor on your pan.
- Add the lemon juice, Bragg Aminos, and stevia to taste.
- Add your meatballs to the sauce. Let them cook on one side until brown and flip- about 8-10 minutes
- Deglaze the pan periodically with beef or imagine chicken stock to create a rich sauce.
- Take out the meatballs and add spinach to the pan letting it wilt.
- Serve the spinach, topped with the meatballs.
- Add chopped green onion/ scallion and Everything But The Bagel Spice if you'd like extra flavor! Enjoy!
Optional Ideas
- You can add in a bit of Xanthan Gum to make your sauce a bit thicker. Just a dash- not too much.
- You can make these meatballs with ground chicken or turkey.
