Dim Sum Cabbage Rolls

Ingredients
- 14 oz ground turkey, ground chicken or ground beef (raw)
- 1 bunch scallions, minced
- 1 tablespoon cilantro and/or parsley stems, minced (optional)
- 5 garlic cloves, minced
- 2 tablespoons fresh ginger, minced
- 1 head of green or savoy cabbage
- 14 oz cauliflower rice- fried up in sauté pan (spice how you like)
- 1/4 cup Bragg Liquid Aminos
- Juice of one lime or 1 - 2 tablespoons rice vinegar or apple cider vinegar
- 1 tablespoon water
- cayenne pepper or franks hot sauce to taste (optional but yummy)
Preparation
- Combine all ingredients except cabbage in a bowl and refrigerate while prepping the cabbage.
- Bring a pot of water to a boil and prep an ice water bath.
- Blanch 8 large leaves in the boiling water for 60 seconds.
- Transfer leaves to the ice bath.
- Dry each leaf.
- Divide your meat mixture into 4 equal portions.
- Divide one portion of the meat mixture in half, placing each half onto a separate leaf. Spoon the mixture onto the stem end of each leaf and roll up tightly, like a burrito.
- Repeat until all cabbage leaves are rolled up.
- Place the dumplings in a steamer basket (I use a rice cooker with the steamer basket option, but you can use any steamer pan you have). Steam for 15 minutes.
- Serve with the sauce.
- Served with cauliflower "fried" rice to make a complete meal.
Optional Ideas
Idea for Step 4 and beyond: Add a few drops of sesame oil and some sesame seeds to the sauce.
