Ingredients
  • 3.5 oz chicken (weighed raw first & cooked)
  • 3.5 oz celery and scallion stalk
  • spicy brown mustard (or another approved mustard)
  • apple cider vinegar or red wine vinegar
  • optional to add apple (choose crisp red or green apple),
  • spices to your liking... Stacey Hawkins Citrus Dill is delicious!
Preparation
  1.  Measure celery and a scallion stalk (onion can be substitute). Add to a bowl.
  2.  Add precooked chicken to the bowl.
  3.  Optional: Cut, slice and chop apple. Add to the bowl.
  4.  Sprinkle in spices of choice.
  5. Add a splash of vinegar of choice,
  6. Squirt with preferred approved mustard of choice
  7. Stir .. done. ENJOY
   
Optional Ideas
  • *Precooking chicken using the Simple Girl Dried BBQ spice is absolutely delish. Adds nice combined flavor with mustard.
  • Add whatever you like, but other spices to add could be: salt, pepper, garlic powder, paprika, dill, lemon, etc.
  • Recipe is considered so delicious by our family that we regularly make this for quick lunches. Very hearty with the apple included. Could even put over a Wasa cracker for even more crunch and fulfillment. Options are endless to fine tune to your preferences!
