Asian Orange Lettuce Beef Wraps

Ingredients
Dressing:
  • 1/4 cup rice vinegar
  • 3 TBL water
  • 2-4 drops orange liquid stevia (Sweet Leaf)
  • 1 TBL Braggs Aminos
  • 2 garlic cloves minced
  • pepper flakes to taste
Beef Mixture:
  • 14 ounces grass-fed beef, ground chicken or ground turkey
  • 2 garlic cloves minced
  • 2 TSP minced fresh ginger (Nan used ginger in a tube and found it in the produce department)
  • 1/8 cup Bragg's Aminos
  • juice from 1/4 of an orange
  • 2-4 orange liquid stevia (Sweet Leaf)
  • red pepper flakes to taste
  • 1/8 TSP xanthan gum
  • 1/4 cup water
  •  3 green tops of scallions chopped
  • 3.5 ounces butter lettuce (save 3 for the wraps) and grape tomatoes for the salad
Makes 4 protein servings
Preparation
  1. In a small bowl, combine the dressing ingredients and set aside for 20-30 minutes
  2. In a large skillet, cook beef, garlic, and ginger over med heat 5-6 minutes breaking into crumbles.
  3.  Stir in the aminos, orange juice, stevia, and pepper flakes and cook for 2-3 minutes.
  4. Last, stir in water and xanthan gum and cook for 2-3 more minutes until the mixture is thickened.
  5. Scoop out 4 equal servings using 1 serving for your lettuce wraps.
  6. Drizzle a little sauce over your wraps and salad. Enjoy!
