Asian Shrimp over “Rice”

Ingredients
  • 14 ounces of shrimp (raw or frozen)
  • 2 cloves of chopped garlic
  • 14 ounces of cauliflower "rice"
  • 1/4 teaspoon of Simple Girl Dry Boullion
  • 3/4 - 1 cup of chicken broth (We love "Imagine" chicken broth)
 
  • 1/2 tablespoon of Wok On by Stacey Hawkins
  • 1 tablespoon of Toasted Sesame Ginger by Stacey Hawkins (In our store and on our website)
  • 2 teaspoons of Braggs Aminos
  • 5-6 drops of Clear Stevia
  • Juice from a 1/2 lemon
  • 1 tablespoon of chopped chives
This makes 4 servings.
Preparation
  1. Spray a frying pan with a little Smart Balance spray and toss in the garlic.  Saute until the garlic is fragrant and then add the shrimp and cook on one side.
  2.  Turn shrimp over and add about 1/4 cup of broth.
  3. Saute the shrimp until they are white and shaped like the letter "C"
  4. Remove the shrimp and set it in a bowl for later.
  5. Add cauliflower to the same pan and then add about 1/2 cup of broth and all the rest of the ingredients.
  6. Let this mixture cook over medium heat for about 10 minutes
Divide the cauliflower and shrimp into 4 equal servings.
