Basil Chicken and Zucchini Linguine

Ingredients
  • 1 cup of Imagine chicken broth
  • 2-3 cloves of chopped garlic
  • 3.5 ounces of thinly sliced chicken (about 3/4" thick)
  • Juice & zest from 1/4 lemon
  • 1/4 teaspoon of Simple Girl Dry Bouillon
  • Salt & pepper to taste
  • 2 tablespoons of rolled and sliced fresh basil or mint (either one is delicious in this recipe)
  • 3.5 ounces raw spiraled zucchini
Preparation
  1. Using medium to high heat, sauté garlic and 1-2 tablespoons of chicken broth.  As the broth cooks down and browns the pan, continue adding 1-2 tablespoons of broth deglazing the pan.
  2. Deglaze your pan 4-5 times, then add your chicken, lemon juice, zest, spices, and 1 tablespoon of basil or mint. Cook for 3-4 minutes, adding more broth as needed to deglaze the pan and thicken the sauce.
  3. Remove from the heat and add zucchini.
  4. Toss to coat the zucchini thoroughly and let it stand in the hot pan for 1-2 minutes.  That is the cooking the zucchini needs.
  5. Top with the rest of the basil or mint. Squeeze more lemon if desired.
