Chilled Garlic “Pickles”
Ingredients
- 1 medium cucumber, sliced into rounds
- 4 cloves garlic, thinly sliced
- ¼–½ cup apple cider vinegar
- 3 tablespoons lemon juice
- Salt, to taste
Preparation
- In a small bowl, combine the apple cider vinegar and lemon juice.
- Generously salt the cucumber slices.
- Pack the cucumber slices tightly into a small glass canning jar, layering garlic slices between them.
- Pour the vinegar and lemon mixture over the cucumbers until fully covered.
- Refrigerate overnight. The pickles will keep in the refrigerator for up to 4 days.
Optional method: Instead of jarring, you can marinate the salted cucumber slices with vinegar and garlic, then use a pickle press or a weighted plate to press out excess liquid before serving.
