Cilantro Lime Cucumber Salad
Ingredients

3–4 tablespoons fresh cilantro, chopped

2 English cucumbers
-
2 cloves garlic, minced

3 tablespoons lime juice
-
½ teaspoon pink Himalayan salt

Black pepper to taste

Dash of red pepper or chili flakes (optional)
Preparation
- Prep the Cucumbers – Chop cucumbers into thin slices or use a spiralizer for a fun, noodle-like texture. Mince the garlic and chop the cilantro.
- Combine in a Bowl – Add cucumbers, garlic, and cilantro to a large mixing bowl.
- Season and Toss – Add lime juice, salt, black pepper, and chili flakes (if using). Toss everything well to combine.
- Chill & Serve – Let sit for 10–15 minutes to allow flavors to meld, or refrigerate before serving.
Optional Ideas
For added richness and healthy fats, drizzle in 2–3 tablespoons of olive oil and toss to coat evenly.
