Ingredients
  • Pick-a-green:  romaine, Swiss chard, kale, escarole, or cabbage
  • Pick your spices: salt, pepper, or anything else
  • Smart Balance spray
  • Imagine chicken stock
Using romaine will make 2 servings.  The other veggies can be weighed before you put them on the grill
Preparation
  1. Heat the grill on high for about 3-4 minutes.  Turn off the grill, scrape the rack with a brush and spray the rack with non-stick spray.
  2. Turn the grill back on high, let it get very hot.
  3. Slice the romaine in half lengthwise, brush the romaine with chicken stock to moisten and spray the romaine with non-stick cooking spray.
  4. Season as desired.
  5. Place romaine on the grill flat side down, close the lid, and let cook 3-4 minutes.
  6. Carefully flip romaine over and let cook another 1-2 minutes.
  7. Cut off the bottom part of the stem and serve hot.
