Kale Apple Salad with Dijon Vinaigrette

Ingredients
Dressing Ingredients
- 2 TBSP Organic Chicken Stock
- 1 1/2 TBSP Apple Cider Vinegar
- 2 TBSP Shallots (minced)
- 1 TBSP Garlic (minced)
- 1 tsp Dijon Mustard
- Dash of Himalayan Salt (to taste)
- Black Pepper (to taste)
- 1/2 cup Fresh Parsley (chopped)
- 1/2 tsp Minced Ginger (optional)
- 2 oz Kale (ribbon slices)
- 1 apple (diced small)
Preparation
- In a blender or a large ziplock bag, add in all dressing ingredients.
- Blend or mix well.
- Chop kale and apple. Add to a bowl or bag.
- Add salad ingredients to the dressing mix.
- Massage the kale very well with the dressing.
- Refrigerate for 15- 30 minutes to let the flavors settle, or eat immediately.
- Plate up the salad and enjoy!
Optional Ideas
- Add additional vegetables or protein of choice to this recipe!
- If you want more dressing to coat the kale, we recommend doubling the dressing recipe.
- Enjoy this salad as side salad with your meals or have it as an entire serving.
- If you're on Step 4 or beyond, add olive oil and/or nuts as your healthy high fat serving.
