- 1 egg
- 3 egg whites
- 3.5 oz kumato tomatoes
- 2 tablespoons minced onion
- oregano, pink or sea salt, fresh ground pepper
Sauté the minced onion in a dry pan until wilted and browned. Add your tomato slices on top of the onion and brown in both sides. Season with oregano, salt, and pepper. Add the whipped eggs and cook until firm. Serve with salsa and hot sauce. Enjoy!
