Mary’s Meatballs

Ingredients
- Ground Chicken, Ground Beef or Ground Turkey (However much you want to meal prep) (14 oz = 4 servings of 3.5 oz)
- Season how you'd like:
- Spray with Bragg Liquid Aminos
- I use: turmeric, allspice, poultry seasoning, onion powder, and paprika
- Add your favorite Salsa (this keeps the meatballs juicy)
Preparation
- Spread wax paper on countertop
- Make 3.5 oz mounds of meat of choice and place on wax paper
- Fill center of each mound with salsa and add seasonings of choice.
- Roll each 3.5 oz mound into 10 little meatballs or 5 bigger meatballs. The mixture should be sticky. (I use plastic gloves for this part and shaping.)
- Place the meatballs and wax paper on a baking sheet.
- Bake in 350 degrees for 13-20 minutes depending on the size of your meatball.
- Let cool.
- If this was a for a bulk meal prep, keep some for dinner and lunch next day. Put the rest into individual plastic bags or freezer containers for future use.
Optional Ideas
- I usually do 4 pounds of ground chicken--92% lean is the best!
- I make a big batch of these, and freeze them, so they are always on hand!
- Weigh it in portions--3.5 for Step 2 and 6 oz. for Interim/ Step 4 Transition.
