Ingredients
- 3.5 ounces/100 grams of chicken breast
- 1 teaspoon Simple Girl Bouillon
- 3.5 ounces/ 100 grams of sweet tomatoes (Compari), quartered
- 1 measured cup of baby kale
- 3/4 - 1 cup Imagine Chicken Broth
- 1 clove of garlic, crushed & minced
- 1 tablespoon red onion, minced
- 1 teaspoon scallion tops, sliced
- 1 tablespoon of fresh lemon juice
- 1/4 teaspoon fresh ginger (I use ginger paste in a tube from the produce section.)
- 1/4 teaspoon allspice
- 1/8 teaspoon white pepper
- 1/8 teaspoon cumin
- 1/8 teaspoon cinnamon
Preparation
- Season your chicken breast with Simple Girl Bouillon, and set it aside.
- Over medium-high heat, pour about 1/4 cup of chicken broth into an aluminum pan and cook it down until it creates a thin brown dry layer on the bottom of the pan, this takes about 5-6 minutes, turn the heat up more if you're carefully watching it.
- Turn the heat down a little, add garlic and onion to the pan AND pour another 1/4 cup of chicken broth into the pan, using a spatula or whisk, scrape and deglaze the pan.
- Add the seasoned chicken breast AND let that mixture cook for 4-5 minutes or until chicken is cooked. Add chicken broth as needed and slice the chicken thin to help it cook faster if desired.
- Remove chicken, ADD tomatoes, lemon juice, and spices to the pan, more broth if needed, and cook for 1 minute.
- Turn off the heat, and add the kale, stirring until it wilts. Add chicken back to the pan to get it warm again and serve.

Optional Ideas
- The key to making delicious sauce when you are not using oil is the process of browning the liquid, and deglazing the pan. Patience Daniel-son :)
- Salt is NOT needed with this recipe unless you are low-sodium broth, which I did not.
- Grilled chicken on the BBQ grill would be a delicious alternative to how the chicken is being cooked.
- Add 1 tablespoon of olive oil while cooking chicken, garlic, scallions, and onion
- Add different veggies like peppers and mushrooms
- Add 1/2 cup cooked quinoa to your plate, the sauce this makes is delicious and it is great over quinoa.
