Shrimp Bisque

Ingredients
This recipe is one vegetable serving and one protein serving.
- 2 TBSP + 1 1/2 cups of chicken broth
- 1-2 fresh garlic cloves minced (or 1/4- 1/2 tsp garlic)
- 3.5 oz of chopped celery
- Napa Cabbage- one leaf chopped
- Dried Parsley to taste
- Dried Basil to taste
- Black Pepper to taste
- Lemon Pepper to taste
- 1 TBS of organic half and half
- 1 TBS Chi Chi salsa ( or other approved salsa of choice)
- 3.5 oz wild caught shrimp (frozen or fresh- cut into bite sized pieces)
- Xanthan gum
- Chives for garnish
- Fresh Squeeze of Lemon Juice at end
Preparation
- Start by weighing the celery and chopping it up into medium pieces.
- Mince the garlic, and chop the cabbage leaf.
- In a medium pot, turn the heat to medium-high. Once hot, add in 2 TBSP of chicken broth to pan.
- Add in minced garlic until fragrant.
- Pour the rest of the broth in.
- Add in the celery, cabbage and all spices.
- Add in half n half and salsa.
- Let the soup boil until the celery is tender.
- Add a pinch of Xanthan gum to thicken to your liking.
- Add in the cut wild caught shrimp.
- If the shrimp are raw, be sure to cook shrimp until they look like C's and are cooked through.
- If the shrimp are pre-cooked, add them until warmed up.
- Garnish with a few cut chives and a squeeze of lemon if desired.
- Serve in a bowl and enjoy!
