Ingredients
- 14 ounces raw riced cauliflower
- 2 cloves garlic - minced
- 4 tablespoons of Imagine chicken broth
- 1/2 cup salsa
- 1/2 tablespoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/4 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/4 cup olive juice
- 1 green onion chopped or 3-4 chopped scallions
Preparation
- Heat your skillet, add the minced garlic, and a little of the chicken broth. Let the broth cook down until the pan is browned.
- Add more broth to deglaze the pan and then add the rest of the ingredients.
- Sauté the cauliflower mixture for 3-4 minutes until completely heated through.
- Divide the mixture into 4 equal parts and refrigerate the leftovers.
