Southwestern Cauliflower Rice

Ingredients
  • 14 ounces raw riced cauliflower
  • 2 cloves garlic - minced
  • 4 tablespoons of Imagine chicken broth
  • 1/2 cup salsa
  • 1/2 tablespoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup olive juice
  • 1 green onion chopped or 3-4 chopped scallions
OR in place of the spices above, use 1 tablespoon of Stacey Hawkins Southwestern or Kickin' Cajun Makes 4 servings of Cauliflower Rice
Preparation
  1. Heat your skillet, add the minced garlic, and a little of the chicken broth.  Let the broth cook down until the pan is browned.
  2. Add more broth to deglaze the pan and then add the rest of the ingredients.
  3. Sauté the cauliflower mixture for 3-4 minutes until completely heated through.
  4. Divide the mixture into 4 equal parts and refrigerate the leftovers.
Optional Ideas
Add your protein to this recipe.  It would go great with ground beef, chicken, or shrimp.  Some of the vegetarian protein options also go very well with this dish, also.
