Spicy Chicken (or Turkey) over Broccoli w/Creamy Fennel Seed Sauce

Ingredients
Sausage ( for best results, mix all ingredients for sausage and let sit overnight in the refrigerator)
  • 14 oz ground chicken or turkey
  • 1/2 tablespoon chopped fresh garlic + 2 more cloves chopped for the sauce
  • 1 tablespoon chili powder
  • 2 tablespoons paprika or smoked paprika
  • 1/2 teaspoon cayenne
  • 1 teaspoon cumin
  • 1 teaspoon pink salt or smoked sea salt
  • 1/2 teaspoon crushed red pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1 teaspoon fennel seed
Sauce
  • 1-2 cups Imagine chicken stock
  • 1 teaspoon fennel seed
  • Lemon - add to your liking
  • 1/8 teaspoon Xanthan gum
Vegetable
  • 3.5 ounces broccoli florets
Preparation
  1. Mix all ingredients for sausage and let sit in the refrigerator overnight or for 24 hours.
  2. Form 3.5 ounce sausage patties. (makes about 5 servings)
  3. Heat up a frying pan. Spray with non-stick spray and cook up patties. Set patties aside.
  4. Using the pan (without washing it), toss in chopped garlic, fennel seed, and chicken stock.
  5. Stir to deglaze the pan.
  6. Add lemon and Xanthan gum. Stir until thickened.
  7. Serve sauce over 1 patty and broccoli.
Makes 4 protein servings and extra sauce.
