Ingredients
- 2.5 ounces of raw spinach
- 2 ounces Campari or cherry tomatoes
- 1.5 ounces celery
- Juice of 1/2 lemon
- 2-3 cloves of fresh garlic
- zest of half lemon (optional)
- 1 peeled cucumber (optional)
- 5-8 ounces of water - as much as you need for desired thickness
Preparation
- Put all ingredients, except the water, into a high-speed blender
- Blend on high speed for 2-3 minutes while slowly adding water to get the soup to desired thickness.
