Ingredients
  • 2.5 ounces of raw spinach
  • 2 ounces Campari or cherry tomatoes
  • 1.5 ounces celery
  • Juice of  1/2 lemon
  • 2-3 cloves of fresh garlic
  • zest of half lemon (optional)
  • 1 peeled cucumber (optional)
  • 5-8 ounces of water - as much as you need for desired thickness
1 vegetable serving
Preparation
  1. Put all ingredients, except the water, into a high-speed blender
  2. Blend on high speed for 2-3 minutes while slowly adding water to get the soup to desired thickness.
Served cold, that's it, Yummy!
