Strawberry Apple Crunch Chicken Salad

Ingredients
- 100g (3.5 oz) chicken breast
- Tarragon, Basil and Himalayan Salt (or spices of choice for chicken)
- 50g (1.7 oz) baby spinach (partially free)
- 150g (5.2 oz) chopped romaine (free)
- 100g (3.5 oz) chopped cucumber (free)
- 50g (1.7 oz) chopped baby asparagus
- 15g (.5 oz) chopped fresh scallions (or to taste)
- 1/2 gala apple chopped
- 3.5 oz chopped strawberries
- Raw Apple Cider Vinegar (to taste)
- Cracked Black Pepper (to taste)
- Everything but the bagel seasoning (to taste)
Preparation
- Weigh 3.5 oz or 100 grams of chicken breast.
- Sprinkle chicken with tarragon, basil, and Himalayan salt and cook in a cast iron, sauté pan or grill. (Spice the chicken how you'd like.)
- Chop & weigh all vegetables. Since the majority of vegetables are free, adjust the amounts how you wish.
- Chop & weigh the fruit.
- Assemble the salad.
- Dress the salad with Apple Cider Vinegar, pepper and Everything But The Bagel seasoning. (Or with an approved dressing of choice.)
- Squeeze lemon on top. (Optional)
- And enjoy!
Optional Ideas
Note: this counts as a serving of fruit as well, and you should chop and weigh the apple to ensure that the apple + strawberries are within the guideline for fruit serving depending on whether you are in Step 2 Low-Cal, Step 4 Transition, or after.
For Step 4 & Beyond only: Top with balsamic dressing & olive oil, and dive in! Good luck eating it all, it’s huge and filling!
