Crust
- 1/2 matzo
- 1 packet of powdered organic stevia
- 2 drops liquid stevia (Vanilla or English toffee)
- 1 tablespoon of water
Strawberry Filling
- 4 oz fresh crushed strawberries
- 1 tablespoon of water
- 2 drops liquid stevia (Vanilla, Lemon, or English Toffee)
- 1/2 teaspoon vanilla powder
- 1/4 teaspoon xanthan gum
Strawberry Cream Topping
- 1 egg white
- 1 tablespoon half-n-half
- 2 oz strawberries
- 1/2 teaspoon vanilla powder
- 1/2 packet of organic stevia powder
- 1/4 teaspoon xanthan gum
This recipe uses 1 of 2 fruit servings.
Crust
- In a food processor, combine the matzo and stevia powder until the mixture is a medium-coarse crumb.
- Add the liquid stevia and water and form the mixture into a dough ball.
- Press the dough into a 3" pie tin
- Bake at 350 degrees for 10-12 minutes
- Cool completely on a wire rack before assembling the pie.
While the crust is cooking make your filling and topping:
Strawberry Filling
- In a bowl, crush 4 oz of strawberries with a fork
- Add the rest of the ingredients and let the filling stand in the refrigerator until you are ready for assembly.
Strawberry Cream Topping
- In a food processor, beat the egg white until foamy, if you can get it fluffy, that is even better.
- Add the rest of the ingredients, and beat until fluffy.
Assemble the pie: Filling first, then cream topping, and top with 1 oz of sliced strawberries.
