Tomato Cilantro Salad

Ingredients
- 3.5 oz tomatoes (plum or cherry work great year-round), chopped
- ½ tablespoon rice vinegar
- 1 tablespoon red onion or scallions, finely diced
- 1 tablespoon lime juice
- 0.5 oz celery, chopped or ¼ teaspoon celery seed
- ½ clove garlic, finely chopped
- ⅛ cup fresh cilantro, chopped
- Dash of cumin
- Dash of paprika
- Dash of smoked chili powder
- Dash of turmeric
- Salt and pepper to taste
Preparation
- Chop the Fresh Ingredients – Dice the tomatoes, red onion (or scallions), celery (if using), and garlic. Chop the fresh cilantro.
- Mix the Base – In a medium bowl, combine the tomatoes, onion, celery (or celery seed), garlic, and cilantro.
- Add the Flavor – Stir in the lime juice and rice vinegar.
- Spice It Up – Sprinkle in cumin, paprika, smoked chili powder, and turmeric. Add salt and pepper to taste.
- Toss & Let It Rest – Mix everything well and let sit for 10–15 minutes to allow the flavors to meld.
- Serve Fresh – Enjoy as a zesty side, a topping for proteins, or a spoonable salsa-style salad.
