Zucchini Noodles and Lentils with Creamy Lemon Pepper Sauce (Vegetarian/Vegan protocol)

Ingredients
  • 3.5 oz serving zucchini noodles
  • 1 serving lentils
Creamy Dressing:
  • 2 Tbsp vegetable stock or water
  • 1 Tbsp of almond milk (Your 1 TBSP of “dairy” for the day)
  • Lemon Pepper Spice or Mrs. Dash Table Blend to taste
  • Crushed red pepper to taste
  • Cracked black pepper to taste
  • Xanthan Gum to thickness liking (I used 1⁄4 teaspoon) (sold at BTM2) 
 
Preparation
  1. Heat all dressing ingredients together.
  2. Cook the lentils & zucchini noodles and dressing all together.
  3. Enjoy!
  You can use the Simple Girl Dry Bouillon to make a stock if you wanted.

  • 1 Tablespoon dried sage
  • 1 Tablespoon ground black pepper
  • 1 Tablespoon dried lemon zest- optional
  • 1 teaspoon cayenne pepper
