Shaved Asparagus Salad with Lemony Dijon Vinaigrette

Ingredients
Vegetables:
12.5 oz shaved asparagus
1.5 oz red onion
Dressing:
- 2 tbsp lemon juice
- 1 tsp dijon mustard
- 2 tsp minced garlic (or minced garlic in a jar)
- 1 tsp finely chopped chives (1/2 tsp of dried chives)
- ¼ tsp salt
- ⅛ tsp pepper
Preparation
- Shave the asparagus by holding the base of each stalk and using a vegetable peeler to create thin ribbons.
- In a medium bowl, combine the shaved asparagus and thinly sliced onions.
- In a small bowl, whisk together the lemon juice, mustard, minced garlic, chopped chives, salt, and pepper until well blended.
- Drizzle the dressing over the asparagus mixture and toss gently to coat.
- Refrigerate for at least 15 minutes to allow the flavors to meld.
- Serve chilled and enjoy!
Optional Ideas
- Add a bit of stevia or chicken broth if the dressing is too strong for you.
- Add parsley if desired.
- For ultra-thin onion slices, use a mandolin if available.
- To add more volume, and a peppery bite, you can expand the salad to 6 meals if you want to mix in fresh arugula.
- After shaving the asparagus, consider steaming or briefly boiling the remaining stems to make them more tender. This allows you to serve the dish warm as a side option instead of a chilled salad.
- Pair this salad with 3.5 oz of grilled of chicken, steak or shrimp!
